Ingredients
Serves: 10-
Pudding:
- 8 ounces pitted dates
- 1 1/4 cups water
- 1 teaspoon baking soda
- 3 tablespoons butter
- 2/3 cup extra-fine sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 1 1/4 cups self-raising flour Butterscotch Sauce:
- 1 cup brown sugar
- 3/4 cup butter
- 1 1/2 cups whipping cream
- 1 teaspoon vanilla extract
Preparation method
Prep: 15 mins | Cook: 1 hour 30 minsPudding:
Put dates and water in saucepan and bring it to the boil. Once it starts to boil, add the baking soda and lower the heat. (Be careful that it doesn’t boil over). Simmer for a few seconds and then remove it from the heat.
Cream the butter and sugar in a blender or food processor, then start adding eggs one at a time to get a smooth consistency.
Pour in the date mixture and puree slightly before adding the flour and processing for about 20 seconds.
Coat a large serving bowl with nonstick cooking spray. Pour the mixture into the bowl. Cover the pudding with a greased piece of wax paper or foil.
Put the bowl inside a covered steamer for 1 1/4 to 1 1/2 hours.
Butterscotch Sauce:About 30 mins before the pudding is finished, put brown sugar, butter, cream and vanilla in a saucepan and stir gently at a very low heat until smooth. (Be careful not to beat it or it will candy, and don’t boil it or it will curdle.) Remove from heat.
Pour sauce over individual servings of steamed pudding.
