Ingredients
500 g frozen spinach, defrosted |
2 large eggs, whites only |
60 ml double cream |
some salt and fresh ground pepper to taste |
some butter |
Instructions
Cook spinach, cool and drain spinach thoroughly of all liquid.
Place in a blender and add salt, pepper, egg whites and cream. Process until smooth.
Spoon spinach mixture into 4 buttered ramekin cups.
Cover loosely with foil and bake at 180°C for 30 minutes or until firm (make sure you check often).
Remove from the oven and leave to cool for 5 minutes.
Loosen edges of each mousse with a knife and invert spinach onto plates.
