- 2 ounces oleo
- 1 quart 3 ounce hot milk
- 6 ounces homogenized peanut butter
- 1 teaspoon sugar
- dash of Worcestershire sauce
Forty years ago I managed a hotel in Virginia. My chef, named Isabelle, looked just like Aunt Jemima, the pancake lady. Thinking we didn’t know, Isabelle kept a pot of fruit and fruit juices under the steam table where it would ferment. Isabelle was one of the happiest chefs I have ever known. Saute celery, onions, and carrots in oleo. Put sauteed vegetables in hot milk. Strain through a strainer and add peanut butter. Sir the peanut butter in thoroughly and add a dash of Worcestershire sauce and sugar.
