Ingredients
300 g rich tea biscuits, crushed |
500 g dates, pitted and chopped |
1 medium egg |
1 tsp vanilla extract |
200 g margarine |
150 g caster sugar |
desiccated coconut |
Instructions
In a saucepan, combine the margarine and the sugar. Cook over low heat until smooth. Set aside and allow to cool completely.
Beat in the egg, then stir in the dates, vanilla and crushed biscuits. Mix well.
Pour the mixture into a greased dish and garnish with coconut.
Allow to steep for 10 minutes in the refrigerator. Cut into squares and serve.
