Ingredients
2 tbsp | oil |
2 tsp | red curry paste |
400 ml | coconut milk |
350 g | pineapple, diced |
3 tbsp | fish sauce |
2 tbsp | brown sugar |
250 g | shrimp, peeled |
Instructions
In a saucepan or wok, heat the oil and stir-fry the curry paste for 1-2 minutes. Pour in the coconut milk and the pineapples and cook over low heat for 5 minutes. Season to taste with fish sauce and sugar.Stir in the shrimp and simmer until the shrimps are pink and just done.
