scottish leftover soup recipe details
Ingredients
500 g | meat, leftover roast beef or game, chopped |
5 clove(s) | garlic, minced |
salt and pepper | |
30 g | butter |
2 | onions, chopped |
1 bulb(s) | celeriac, diced |
3 | carrots, diced |
2 stalk(s) | leek, sliced |
1 | parsnip, chopped |
2 ½ l | vegetable stock |
6 slice(s) | bacon, thick cut, diced |
1 kg | game bones, leftover |
2 tbsp | parsley, chopped |
2 tbsp | chives, chopped |
dry red wine |
Instructions
In a large saucepan, melt the butter and fry the bacon for 4-5 minutes. Add the game bones and cook stirring for 3-4 minutes. Stir in the vegetables and cook for some more minutes.Pour in the stock and bring to a boil. Season with salt and pepper. Reduce the heat. Cook over low heat for 30 minutes. Remove the bones and allow to cool for a moment, then peel any meat from the bones and return the meat into the soup.
Add the leftover meat and cook over low heat for another 10 minutes. Skim off some of the fat. Season to taste with red wine, salt and pepper. Stir in the parsley and chives before serving.
