Roasted Fillet of Beef recipe

Ingredients
2 kg | fillet of beef |
60 ml | Dijon mustard |
1 tbsp | fresh thyme leaves |
2 tbsp | vegetable oil |
Instructions
Preheat oven to 220°C.Spread the mustard evenly on all sides of the fillet. Sprinkle with thyme.
Heat the oil in a skillet over high heat and brown the fillet on all sides, 2-3 minutes per side.
Place the fillet in oven and reduce temperature to 200°C. Roast about 25 minutes for rare.
Remove the fillet from oven and allow it to rest 10 minutes before slicing.
