Rhubarb tiramisu recipe details
Ingredients
250 g rhubarb, sliced |
150 g sugar, plus 2 extra tablespoons |
4 tbsp Grand Marnier |
250 ml whipping cream |
230 g mascarpone cheese |
70 Ladyfingers |
120 ml white chocolate syrup |
200 ml orange juice |
Instructions
In large saucepan over medium meat combine rhubarb and sugar. Stir until sugar dissolves. Cook, stirring, until thickened, 20-25 minutes.
Remove from heat and cool completely.
Combine orange juice and 2 tablespoons Grand Marnier.
Whip 250 ml cream, gradually adding remaining 2 tablespoons sugar.
Whisk remaining 2 tablespoons Grand Marnier into mascarpone and fold whipped cream into mascarpone mixture.
Place 3 rows lady finger into bottom of a baking dish and brush with orange juice mixture. Drizzle 60 ml white chocolate syrup over lady fingers and spread half of the mascarpone mixture over chocolate.
Arrange 3 more rows lady finger halves brushed with orange juice mixture over mascarpone. Drizzle with remaining white chocolate syrup and spread evenly. Spread rhubarb mixture on top.
Top with remaining mascarpone mixture and last 3 rows of lady finger halves brushed with orange juice mixture.
Cover and refrigerate overnight.
