- Ingredients:
- 4 eggs
- 4 slices toast
- Sauce:
- 1/3 cup butter
- 2 Tablespoons finely chopped chives
- 1 Tablespoon lemon juice
- 1 teaspoon grated lemon peel
- 1/2 teaspoon salt
- Dash of pepper
Poach eggs in an egg poacher for 3 minutes (time is approximate based upon egg size and how well cooked the yolk needs to be). Place each poached egg on a piece of toast and top with sauce.
Sauce:Melt butter. Add remaining ingredients, mixing thoroughly. Serve sauce hot.
