Orange shortcrust pastry with mincemeat filling recipe details
Ingredients
200 g | flour |
1 pinch(es) | salt |
80 g | butter, cut into cubes |
grated zest of 1 orange | |
juice of 1 orange | |
1 medium | egg, white and yolk separated |
For the Filling: | |
mincemeat |
Instructions
Combine flour, salt, butter and orange zest in a blender and mix until the mixture resembles breadcrumbs.Mix together the egg yolk and the orange juice and to the flour mixture. Process until smooth.
Knead to make a ball, then flatten it slightly to a thick disc. Cover with cling film and rest in the fridge for at least 20 minutes, preferably longer.
Roll our half of the pastry, and cut out circles – make sure they fit the pie tins you have.
Lay the pastry circles into the pie tin then spoon in the mincemeat. Roll out the rest of the pastry and cut out more circles to fit the tops of the pies.
Preheat oven to 190°C.
Brush the tops with the beaten egg white and bake for 10-15 minutes or until the pastry is golden and the mincemeat heated through.
