- One 16-ounce package semi-sweet chocolate chips
- Dash of vanilla
- 2 teaspoons unsalted butter
- 2 cups Kellogg’s Rice Krispiescereal straight from the box
- Mint chocolate chip ice cream
- Cool Whipdessert topping
- 1 pie shell, store-bought or homemade
Our neighbor, William Floyd, recalls with a twinkle in his eye how his mother made this on his 10th birthday…fifty years ago in New Orleans! It’s the best!
Microwave the chocolate bits with butter until mostly melted. Add a dash of vanilla and mix in the cereal. Mold into pie shell and freeze at least 3 hours. Take out of freezer, add ice cream, and freeze again for at least 3 hours. Top with dessert topping before serving.
