Limoncello tiramisu recipe details
Ingredients
5 large | eggs, yolks and whites separated |
1 tbsp | grated lemon zest |
180 ml | fresh lemon juice |
130 g | sugar |
300 ml | limoncello liqueur |
240 ml | water |
500 g | mascarpone cheese |
40 | Ladyfingers |
Instructions
Put egg whites into bowl for whipping with an electric mixer.Beat the egg yolks with 30g of the sugar and 120ml of the limoncello until well blended. Set mixture into the bowl of a double boiler and whisk constantly while on a simmer, 5 minutes or longer. Remove from heat and let cool.
For the syrup combine the remaining limoncello, lemon juice, water, and 60g of the sugar in a saucepan. Bring to a boil, stirring to dissolve the sugar, and cook for 5 minutes. Let the syrup cool completely.
In another large bowl, combine the mascarpone with the grated lemon zest and beat until light and creamy.
Whip the egg whites with the remaining sugar until it holds firm peaks.
When the yolk-limoncello mixture is cooled, combine with the mascarpone. Fold in the whipped egg whites until the limoncello-mascarpone cream is evenly blended.
Pour some of the cooled syrup into a shallow dish. Dunk ladyfingers in the syrup and place them in in neat, tight rows in a baking dish or casserole.
Scoop half of the mascarpone cream onto the ladyfingers, and smooth it. Dip and arrange a second layer of ladyfingers in the pan, and cover it completely with the remainder of the cream.
Seal the tiramisł in plastic wrap and refrigerate for 6 hours.
