Lemon poppy seed scones details
- Ingredients:
- Rind from 1 lemon
- 2 cups self-rising flour
- 2 Tablespoons sugar
- 1 teaspoon poppy seeds
- 5 Tablespoons margarine, softened
- 1 egg
- 1/2 cup milk
- Glaze
- 1 cup confectioners sugar
- 3-1/2 Tablespoons lemon juice
Preheat oven. Mix lemon rind, flour, sugar, and poppy seeds together. Cut in margarine. Mix eggs and milk together; place with other ingredients and mix. Separate dough into 2 portions. On a floured surface, press dough to about 1/4-inch thickness. Cut into pie shape and place on cookie sheet and bake at 400 degrees for 12 minutes.
Glaze: Mix confectioners sugar with lemon juice. Brush over scones.
Serves:3 to 4
