Ingredients
Serves: 12- Stock:
- 1 leftover medium-sized turkey carcass
- 1 onion, quartered
- 1 carrot, chopped
- 1 celery rib, chopped
- Soup:
- 2 cups shredded cooked turkey
- 4 celery ribs, chopped
- 2 cups frozen corn
- 2 carrots, sliced
- 1 onion, chopped
- 1 cup dry orzo pasta
- 2 tablespoons minced fresh parsley
- 4 teaspoons chicken bouillon granules
- 1 teaspoon curry powder
- 1 teaspoon salt
- 1/2 teaspoon ground cumin
- 1/2 teaspoon pepper
Preparation method
Prep: 15 mins | Cook: 2 hours 30 mins1. To make the stock, combine turkey carcass, water, onion, carrot, and celery in a big stock pot. Place over low heat and bring to a boil. Simmer, covered, for 2 hours.
2. Line a colander with cheesecloth if you have it, or just use the finest mesh colander you have. Strain the stock through the colander into another large pot. Remove any excess fat floating on the surface.
3. Combine strained stock with remaining ingredients and set over medium heat. When stock boils, simmer on low heat for 30 minutes. Serve.
