Ingredients

125 g margarine
125 g plain flour
250 ml water
4 medium eggs
400 ml double or whipping cream, whipped as filling
jam, for filling

Instructions

Put the water and margarine in a pan and heat until margarine has melted. Sift the flour into the mixture and stir until a basic dough is formed and is smooth and thick, continuing to heat throughout.

Remove from heat and allow to cool. Break the eggs into a glass and beat lightly. Add to the dough and mix well.

Preheat oven to gas Mark 6, 200°C, 400°F.

Drop 2 tbsp of dough at a time onto a greased baking sheet, keeping each mound quite separate from its neighbours as they are inclined to swell dramatically.

Bake for about 20-30 minutes or until pale golden in colour. Do not be tempted to open the oven during the first 15 minutes as the buns will collapse.

Remove from oven and cool completely.

Slit open and fill with whipped cream and a teaspoon of jam. Top with melted chocolate.

Eat immediately, or chill for at least one hour before serving.

Options:
Mash soft berry fruits, bananas or peaches into the cream and use that as filling.

Note:
The quantity made will vary according to the size of bun produced; 8 should be the minimum but a larger number is achievable.
