Home made mustards smooth and coarse recipe details
Ingredients
200 g | mustard seed |
150 ml | balsamic vinegar |
150 ml | white wine or water |
2 tbsp | salt |
2 tbsp | honey or brown sugar |
rapeseed oil |
Instructions
Ground the mustard seed by and by in a blender or in a mortar with pestle. Separate the fine part and the coarse part of the mustard powder by a not too fine-meshed chinois strainer. Use the fine part for a smooth mustard and the remaining part in the chinois for a coarse mustard.Add in each case to 200g of mustard powder the remaining ingredients and mix well. Leave to soak and thicken for at least 3 hours, better overnight, stirring occasionally. In the end the consistency of both mustards should be paste-like. If too thick, add a bit more liquid.
Fill into jars, seal and store in the fridge.
More mustard ideas:

Mediterranean herb mustard: add dried Mediterranean herbs.
Orange and chili mustard: season with orange zest and ground chili flakes.
