Ingredients

200 g mustard seed
150 ml balsamic vinegar
150 ml white wine or water
2 tbsp salt
2 tbsp honey or brown sugar
rapeseed oil

Instructions

Ground the mustard seed by and by in a blender or in a mortar with pestle. Separate the fine part and the coarse part of the mustard powder by a not too fine-meshed chinois strainer. Use the fine part for a smooth mustard and the remaining part in the chinois for a coarse mustard.

Add in each case to 200g of mustard powder the remaining ingredients and mix well. Leave to soak and thicken for at least 3 hours, better overnight, stirring occasionally. In the end the consistency of both mustards should be paste-like. If too thick, add a bit more liquid.

Fill into jars, seal and store in the fridge.

More mustard ideas:
Honey and poppy seed mustard: add more honey and some poppy seeds.
Mediterranean herb mustard: add dried Mediterranean herbs.
Orange and chili mustard: season with orange zest and ground chili flakes.

Special home made mustard makes also a nice little gift.
