Ingredients
Serves: 6- 1 1/2 pounds beef stew meat, cut into 1-inch cubes
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 6 cups water
- 1 (14 1/2 ounce) can beef broth
- 1/4 cup soy sauce
- 1 (2-inch) piece fresh ginger, peeled and quartered
- 1 teaspoon fennel seeds
- 1/2 teaspoon salt
- 1 cup uncooked barley
- 12 cups baby spinach leaves
Preparation method
Prep: 10 mins | Cook: 1 hour 45 mins1. Place beef, onion, garlic, water, broth, soy sauce, ginger, fennel seeds, and salt in a saucepan and set over high heat. When mixture boils, add barley and turn heat down to medium-low.
2. Place a lid on the saucepan. Cook for about 90 minutes, then add spinach. Cook for 3 more minutes. Take the ginger out, then serve.
