Ingredients

Serves: 6
  • 1 1/2 pounds beef stew meat, cut into 1-inch cubes
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 6 cups water
  • 1 (14 1/2 ounce) can beef broth
  • 1/4 cup soy sauce
  • 1 (2-inch) piece fresh ginger, peeled and quartered
  • 1 teaspoon fennel seeds
  • 1/2 teaspoon salt
  • 1 cup uncooked barley
  • 12 cups baby spinach leaves

Preparation method

Prep: 10 mins | Cook: 1 hour 45 mins

1. Place beef, onion, garlic, water, broth, soy sauce, ginger, fennel seeds, and salt in a saucepan and set over high heat. When mixture boils, add barley and turn heat down to medium-low.
2. Place a lid on the saucepan. Cook for about 90 minutes, then add spinach. Cook for 3 more minutes. Take the ginger out, then serve.
