Ginger carrot potato soup recipe details
Ingredients
6 medium | carrots, peeled, sliced |
1 | leek, trimmed |
1 medium | potato, peeled, diced |
2 medium | onions, chopped |
3 clove(s) | garlic, minced |
2 tbsp | ginger root, minced |
400 ml | coconut milk |
1 l | vegetable broth |
120 ml | dry white wine |
2 tbsp | olive oil |
1 tsp | paprika |
1 tsp | turmeric |
salt and pepper, to taste |
Instructions
Heat oil in a medium pot, sauté onions for about 2 minutes. Add leeks and garlic and sauté for about 4-5 minutes until softened, but not browned.Add carrots and stir until carrots begin to caramelize a bit, about 6 more minutes.
Add potato, ginger, stock, and coconut milk. Stir and bring to a boil for about 5 minutes; reduce heat and add spices.
Cook until potatoes are tender, about 20-25 minutes.
For a smoother outcome, purée soup in batches in a blender or use a hand-held blender. Serve.
