Filled potato cups recipe details
Ingredients
1 kg | potatoes, peeled |
100 g | rocket, chopped |
75 g | walnuts |
8 tbsp | ricotta cheese |
some | salt and pepper |
3 | egg yolks |
1 tbsp | cornflour |
8 small | eggs |
200 ml | vegetable stock |
100 ml | milk |
100 g | single cream |
200 g | Stilton, crumbled |
Instructions
Cook the potatoes in salted water until done.Toast the walnuts in a dry pan until slightly golden. Take out of the pan and chop. Mix together the rocket, ricotta and walnuts. Season to taste with salt and pepper.
Drain, peel and mash the potatoes. Stir in the egg yolks and the cornflour and season with salt, pepper and nutmeg.
Preheat the oven to 175°C.
Transfer the mashed potatoes into a freezing bag. Cut off one corner of the bag. Extrude the mash onto 2 buttered baking trays in rings to form cups. Fill each cup with 1-2 tablespoons of the Ricotta mixture. Break a small egg onto the mixture. Place the tray into the oven and bake for 20-25 minutes.
In a saucepan, combine the stock, milk and the cream. Bring to the boil and simmer for 5 minutes. Add the Stilton and stir until the cheese has melted. Season to taste with salt and pepper.
Serve the potato cups together with the Stilton sauce.
