Curry creamed carrot soup recipe details
Ingredients
60 g | butter |
500 g | carrots, sliced |
3 medium | onions, chopped |
2 tsp | curry powder |
120 ml | milk |
120 ml | vegetable broth |
2 tbsp | double cream |
salt and pepper, to taste |
Instructions
Melt butter, add onions, carrots and curry powder. Sauté for about 5 minutes whilst stirring continously.Add broth and bring to the boil. Reduce heat and simmer 25-30 minutes until vegetables are cooked.
Pour soup though a sieve and process onions and carrots in a blender until smooth. Return puree to pan, add milk and cream and bring to a boil. Season to taste and serve with croutons.
