Creme brulee with coconut recipe details
- Ingredients
- 3-1/4 cups whole milk (or 2-3/4 cups milk and 1 cup heavy cream)
- Split vanilla bean
- 2/3 cup flaked coconut
- 6 egg yolks
- 2 whole eggs
- 1/2 cup sugar
- 1/2 cup brown sugar
Heat milk or milk and cream with a split vanilla bean until just before boiling. Let cool. Place flaked coconut in 325-degree oven until golden. In a bowl, blend egg yolks and whole eggs with sugar. Add milk after scraping vanilla from bean into milk. Combine gently but well.
In baking dish, cover bottom with roasted coconut and pour milk over it. Place baking dish in roasting pan with enough water to come up half way. Bake at 325 degrees for approximately 40 minutes or until firm. Cool 3 or 4 hours or overnight. Over custard, sift brown sugar evenly and caramelize under broiler or use blowtorch. This is nice served with whipped cream.
