Ingredients
1 ½ kg | top loin of beef |
2 tbsp | lard |
salt | |
freshly ground black pepper | |
freshly ground green pepper | |
butter |
Instructions
Preheat the oven to 200°C.Trim the meat and cut diamond-shapes into the fat layer. In a large saucepan, heat the lard and sear the meat all around. Season with salt and pepper.
Place the meat into a buttered casserole dish. Reduce the heat to 160°C. Bake until the internal temperature reaches 50°C, measured by a meat thermometer. Switch-off the oven but leave the meat inside until the internal temperature reaches 57°C.
To serve, cut the roast beef into thin slices. Serve warm or cold.
