Chocolate ice cream recipe details
Ingredients
175 g | caster sugar |
150 ml | water |
400 g | plain, high cocoa content chocolate, preferably 70% plus |
4 large | egg yolks |
900 ml | double cream |
Instructions
Place the sugar and water into a saucepan and heat until the sugar dissolves, stirring occasionally. Raise the heat and bring to a boil and then simmer for about 6-7 minutes.Break the chocolate into small pieces and add to the syrup. Stir until completely melted. Whisk in the egg yolks and set aside to cool.
Whip the cream until thick and fold into the chocolate mixture.
Pour into a container and freeze until required or freeze in an ice cream maker according to manufacturers’ instructions.
