- 2 cups sugar
- 4 eggs
- 2 teaspoons vanilla
- 1/2 cup melted butter
- 5 squares melted chocolate
- 2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 cup chopped nuts (optional)
If you are a chocolate lover, this cookie is for you. It has always been one of my family’s favorites. It is a moist, dense chocolate dough that absolutely melts in your mouth. Each February, the Mount Washington Ski Touring Association sponsors a chocolate festival where people ski to various businesses along the trail to sample all of the chocolate treats offered by each of the participating properties. Along with several other delectable chocolate treats, we always offer chocolate chews. They are fun to make, great to look at, and even more enjoyable to eat.Becky Mallar, Pastry Chef & Owner
Beat the eggs with the sugar and vanilla. Blend in the melted chocolate and butter. Mix all of the dry ingredients together in a separate bowl. Add to chocolate mixture and stir until all ingredients are thoroughly mixed. Add walnuts, if preferred. Chill the mixture several hours or overnight. Shape into balls approximately 1-1/2 inches in diameter and roll in confectioners’ sugar. Place on cookie sheet at least 2 inches apart. Bake in a 350-degree oven for 10 to 15 minutes or until done. For a soft cookie center, remove from oven while cookies are still soft in the center.
