Chicken tortilla with guacamole details
Ingredients
400 g chicken breast fillet, dicedsalt and pepper
1 tbsp oil
1 clove(s) garlic, chopped
1 yellow bell pepper, diced
1 onion, chopped
4 small tomatoes, diced
2 spring onions, sliced
some lettuce leaves
6 tbspcrème fraîche
1 pinch(es) grated lime peel
1 ripe avocado, peeled, stone removed, diced
1 tbsp lemon juice
½ clove(s) garlic, chopped
Tabasco sauce
For the flour tortillas: 100 ml water
2 tbsp oil
280 g flour
salt
oil, for frying
Method
1. In a bowl, combine a pinch of salt and the flour.2. Pour in the water and the oil.
3. Knead until well combined. Wrap the dough into foil and allow to cool for 3 hours.
4. Quarter the dough and roll out each part.
5. In a pan, heat the oil and bake the tortillas for a minute per side.
6. In a pan, fry the chicken meat until golden and crispy all around.
7. Add the garlic, onion and the bell pepper and cook for a few more minutes.
8. Season with salt and cayenne pepper.
9. Optional, season with Tabasco sauce as well.
10. Mix together the crème fraîche and a pinch of lime peel.
11. Season to taste with salt and pepper.
12. Mash the avocado flesh finely with a fork. Season to taste with lemon juice, salt and pepper.
13. Heat the tortillas. Spread the tortillas with the guacamole. Top with a lettuce leaf, tomatoes, onion, meat mixture and a dollop of crème fraîche.
14. Fold the edges of the tortillas together, roll up and serve immediately.
