Ingredients

500 g basmati rice
500 g chicken, pieces
2  onions,sliced
3  tomatoes,chopped
200 g yoghurt (whipped)
2 tbsp ginger/garlic paste
2  green chillies
4 tbsp oil/ghee
1 handful coriander leaves, chopped, for garnishing,
1 handful mint leaves, chopped, for garnishing,
1 pack(s) Biryani Masala
pinch(es) yellow/orange food colour
salt, to taste

Instructions

Boil the basmati rice with 2 tablespoons of salt and some mint leaves. Boil until the rice is nearly tender. Then drain it thoroughly. Set aside.

In a separate pan, heat the ghee and fry the onions until golden brown. Add the ginger/garlic paste and chicken pieces and stir-fry for 2 minutes. Now add the green chillies, tomatoes, yoghurt and Biryani masala. Stir-fry for a few minutes and cover. Cook until chicken is cooked and oil starts separating from the mixture.

In a separate bigger pan layer the boiled rice and the chicken mixture in two to three layers. Add mint and coriander leaves to each layer. Sprinkle a pinch of food colour, if desired. Cover and cook for 5 minutes.

Mix well and serve with salad or yoghurt chutney.
