Ingredients
500 g | basmati rice |
500 g | chicken, pieces |
2 | onions,sliced |
3 | tomatoes,chopped |
200 g | yoghurt (whipped) |
2 tbsp | ginger/garlic paste |
2 | green chillies |
4 tbsp | oil/ghee |
1 handful | coriander leaves, chopped, for garnishing, |
1 handful | mint leaves, chopped, for garnishing, |
1 pack(s) | Biryani Masala |
pinch(es) | yellow/orange food colour |
salt, to taste |
Instructions
Boil the basmati rice with 2 tablespoons of salt and some mint leaves. Boil until the rice is nearly tender. Then drain it thoroughly. Set aside.In a separate pan, heat the ghee and fry the onions until golden brown. Add the ginger/garlic paste and chicken pieces and stir-fry for 2 minutes. Now add the green chillies, tomatoes, yoghurt and Biryani masala. Stir-fry for a few minutes and cover. Cook until chicken is cooked and oil starts separating from the mixture.
In a separate bigger pan layer the boiled rice and the chicken mixture in two to three layers. Add mint and coriander leaves to each layer. Sprinkle a pinch of food colour, if desired. Cover and cook for 5 minutes.
Mix well and serve with salad or yoghurt chutney.
