Chestnut ice cream on spicy orange fillets recipe details
Ingredients
For the ice cream: | |
150 ml | whipping cream |
150 ml | milk |
4 | egg yolks |
90 g | sugar |
100 g | chestnuts |
2 cl | whiskey |
For the compote: | |
6 | oranges |
90 g | sugar |
100 ml | white wine |
180 ml | orange juice |
1 stick(s) | cinnamon |
2 | cloves |
1 | star anise |
For the cookies: | |
1 | orange, grated peel and juice |
45 g | flour |
45 g | soft butter |
45 g | almonds, chopped |
100 g | sugar |
2 pinch(es) | gingerbread spice mix |
Instructions
For the ice cream, bring the cream with milk, sugar and the chestnuts in a saucepan to a boil. Add a dash of whisky (if kids are around, leave out the whisky). Purée the mixture with a hand blender.Whisk the egg yolks in a bowl until creamy. Slowly pour in the hot chestnut mixture, stirring constantly with a wire whisk until the mixture has thickened. Allow to cool and freeze in an ice cream maker for 45 minutes or in the freezer for 3-4 hours, stirring occasionally.
Peel and fillet the oranges. Caramelize the sugar in a saucepan. Deglaze with the white wine. Add the spices and bring to a boil. Add the orange juice and boil down until slightly thickened. Add the orange fillets, take from heat and allow to cool.
For the Christmas brittle cookies, mix flour, butter, sugar almonds, orange peel, orange juice and gingerbread spice mix until smooth. Place spoonfuls of the batter onto a baking sheet, lined with baking paper, leaving enough space in between the rounds. Bake in the preheated oven at 170°C until golden. Take out of the oven and allow to cool.
Before serving, take the ice cream from the freezer or the ice cream maker and wait for some minutes until the ice cream has softened a bit.
Divide the orange compote into dessert bowls, top with a scoop of ice cream each and serve garnished with the Christmas brittle cookie rounds.
