Ingredients
800 g | potatoes, peeled and cut into 2cm cubes |
1 bunch(es) | spring onions, finely chopped |
175 ml | milk |
salt and fresh ground pepper, to taste | |
125 g | butter |
Instructions
In a large saucepan, boil a quantity of salted water and add the potatoes. Cover and simmer for 15-20 minutes until tender.Simmer the onions in the milk in another pan for 2-3 minutes.
Drain the potatoes and either mash or use a whisk to bring to a fluffy mass. Allow to remain in the pan for 2-3 minutes to evaporate any surplus moisture. Add the onion and milk mixture and mix well. Season to taste.
Transfer to a large serving bowl and make a well in the centre. Place the butter in the centre and allow it to melt before serving.
