Apricot Pancake recipe
Ingredients
100 g | flour |
1 large | egg |
240 ml | milk |
50 g | butter |
apricots, pitted, chopped |
Instructions
For the batter combine the flour and egg and mix with a fork. Add the milk and keep stirring or mixing with an electric mixer until smooth.
Add chopped apricots and stir well.
Melt butter in a frying pan and once hot, add the apricot pancake mixture. Cook on each side for around 2-3 minutes until nice and golden on each side.
