Apple and pineapple muesli details
- Ingredients:
- 3 cups quick rolled oats
- 2 cups apple juice
- One 20-ounce can crushed pineapple in juice
- 2 medium Red Delicious apples
- One 32-ounce container vanilla-flavored yogurt
- 1 teaspoon vanilla extract
- 1 cup chopped hazelnuts
- 1-1/2 cups golden raisins
- 1 scant teaspoon cinnamon
- dash nutmeg
- 3 Tablespoons honey
In a medium-size bowl, combine the oats, apple juice, raisins, and crushed pineapple with its juice. Cover and refrigerate the muesli several hours or overnight.
Just before serving, coarsely shred the apple. Mix the honey, vanilla, cinnamon, and nutmeg into the yogurt; mix very well. Stir the apple and yogurt into the muesli. Serve with a few berries or mixed fruit on top and fresh mint for garnish.
