450 g Spinach, frozen

1 Onion, chopped

2 Garlic cloves

1-2 Potatoes

3 tbsp Olive oil

1 tbsp per plate Sour cream

to taste Salt and Pepper

1/2 liter Vegetable broth

Preparation:Put the oil in a medium sized pan. Heat it on medium heat. |

Add the chopped onion and fry it until it becomes golden. |

Add the chopped garlic as well as the peeled potatoe(s) cut in pieces. |

Mix everything together for a few minutes. |

Add the spinach, and half a liter of vegetable broth. |

Cooking:Bring to boil. Season with salt and pepper to taste. |

Lower the heat to medium and cook for 30 min with occasional stirring. |

Using a blender or an immersion blender make the soup smooth. |

Serving:Divide in 4 soup bowls. Add a tablespoon of sour cream to each plate. |

Tips:If you want, besides the potatoe(s) you can add leek to the soup. |
