Ingredients

Adjust Servings:
450 g Spinach, frozen
1 Onion, chopped
2 Garlic cloves
1-2 Potatoes
3 tbsp Olive oil
1 tbsp per plate Sour cream
to taste Salt and Pepper
1/2 liter Vegetable broth

Preparation:

Put the oil in a medium sized pan. Heat it on medium heat.

Add the chopped onion and fry it until it becomes golden.

Add the chopped garlic as well as the peeled potatoe(s) cut in pieces.

Mix everything together for a few minutes.

Add the spinach, and half a liter of vegetable broth.

Cooking:

Bring to boil. Season with salt and pepper to taste.

Lower the heat to medium and cook for 30 min with occasional stirring.

Using a blender or an immersion blender make the soup smooth.

Serving:

Divide in 4 soup bowls. Add a tablespoon of sour cream to each plate.

Tips:

If you want, besides the potatoe(s) you can add leek to the soup.
It can also be served with a piece of bread.
Another option is to use cooking cream; add it to the soup in the last 5 minutes of cooking.
You can also use fresh spinach. If using fresh spinach, add more vegetable broth. For frozen spinach you do not need a lot, as the spinach itself will release some water during cooking.
