Ingredients

4 large sweet potatoes
1 onion
1 garlic clove
10 cherry tomatoes
1 tin black beans 400 g
1 tin corn 150 g
freshly squeezed juice from 1 lime
2 tbsp olive oil
1 avocado
salt and pepper
chilli flakes optional

Directions

1.

Preparation:

Heat the oven to 200 degrees Celsius.
Put baking paper on a baking tray.
Mark as complete

Using a fork, poke multiple small holes in the sweet potatoes. Put the potatoes on the baking tray. Drizzle with olive oil.
Bake the potatoes for approximately 40 min or until they become soft.
Mark as complete

Stuffing:

Peel the onion and garlic and cut them into small pieces. In a bowl combine all ingredients: chopped onion and garlic, cherry tomatoes cut in half, black beans, corn, lime juice, and season with the spices. Mix nicely.
Peel the avocado. In a separate bowl put the avocado and smash it with a fork until it reaches a puree-consistency. Add some salt and pepper.

Assembly:

Take the baked sweet tomatoes out of the oven and on a serving tray. Cut them in half, but not completely so they still keep their shape.
First fill the cut potatoes with the stuffing. Add a spoon of smashed avocado on top of each potato.

Serving:

Cut one lime to pieces and decorate the serving plate.

Optional:

If you are not a fan of vegetarian dishes, you can combine these sweet stuffed potatoes with chicken or turkey meatballs.
