Preparation:Heat the oven to 200 degrees Celsius. |

Put baking paper on a baking tray. |

Using a fork, poke multiple small holes in the sweet potatoes. |

Bake the potatoes for approximately 40 min or until they become soft. |

Stuffing:Peel the onion and garlic and cut them into small pieces. |

In a bowl combine all ingredients: chopped onion and garlic, cherry tomatoes cut in half, black beans, corn, lime juice, and season with the spices. |

Peel the avocado. In a separate bowl put the avocado and smash it with a fork until it reaches a puree-consistency. Add some salt and pepper. |

Assembling:Take the baked sweet tomatoes out of the oven and on a serving tray. Cut them in half, but not completely so they still keep their shape. |

First fill the cut potatoes with the stuffing. Add a spoon of smashed avocado on top of each potato. |

Serving:Cut one lime to pieces and decorate the serving plate. |
