Ingredients

Adjust Servings:
1/2 cup Oatmeal flour
1/2 cup Rye flour
Egg
1 Baking powder 12 g
arpund 250 mL Lukewarm water
A pinch of salt

Rye Pancakes

Not as fluffy as original pancakes, but it is a nice change.

Preparation:

Break the egg and separate the egg yolk from the egg white.

Add a pinch of salt to the egg white.
Whip it with a mixer until you get a nice firm foam.

In a bowl of a blender add the oatmeal, rye flour, egg yolk and baking powder.
Add half of the water.

Blend the ingredients until you get a nice and smooth mixture.
Add water until you reach the desired consistency.

Once you are satisfied with the consistency of the mixture, flip in the egg whites.
Mix gently with a spoon.

Baking:

Heat a small sized pan on the stove.
Add a little oil.
Bake the pancakes for a few minutes per side, until they become brownish.

Serving:

You can eat these pancakes sweet (peanut butter, bananas, blueberries, Greek yogurt, hazelnut spread etc) or salty (cheese, cream cheese spread etc).

Tip:

Try the cottage cheese spread I made:
- 250 g cottage cheese
- 1 tbsp Greek yogurt
- 2 tbsp olive oil
- 1 garlic clove (nicely chopped or use garlic grinder)
- salt and pepper to taste
