Preparation:

Wash and dry zucchini, broccoli and green paprika.
Peel the onion.
Cut the vegetables in small pieces.

In a round fry pan put olive oil and heat it.
Put the onion, cut into pieces, and fry it until it softens and becomes golden on the edges.
Add the rest of the vegetables and fry them until they soften.

In a small bowl mix the eggs.
For the eggs to be fluffier you can add a little milk, sour cream or carbonated water.
Add salt and pepper to taste.

Remove the vegetables from the pan.
Pour the eggs and wait a little for the edges to fry.

Add the vegetables and cover the pan with a lid.
Once the eggs are done open the pan, fold the omelette in half and serve on a plate.

Feta cheese also adds to the taste of the dish.
