Ingredients

200 g Ground biscuits
150 g Butter, softened
750 g Cream cheese
3 Large eggs
150 mL + 3 tbsp Honey
3 Mangos
Freshly squeezed lemon juice from 2 lemons
200 mL Sour cream

Preparation:

Preheat the oven to 170 degrees Celsius.
Put parchment paper on a 24-cm cake pan.

Crust:

In a bowl mix together the ground biscuits and softened butter until you get a nice, even and firm mixture.
Spread the mixture on the bottom of the cake pan. Press firmly.
Bake for 10 min.

Mango Puree:

Peel the mangos and cut them on slices.
Squeeze lemon juice from 2 lemons.
Put the sliced mangoes and lemon juice in a blender.
Blend until you get a smooth mango puree.

Cheesecake Layer:

In a bowl mix together the cream cheese, honey, and eggs.
Add the mango puree. If you want to decorate the cake, you can leave a little from the puree for the decoration.

Lower the oven to 160 degrees Celsius.
Pour the cheesecake layer on top of the baked crust.
Bake from 45 min to 1 hour. The middle should still be jiggly.

Sour Cream Layer:

Increase the oven temperature to 190 degrees Celsius.
In a bowl mix together the sour cream and 3 tbsp honey.
Pour the sour cream layer over the baked cheesecake layer.
If you left some of the mango puree you an decorate the cake as you wish.

Bake fo5 15 min.
Let the cake cool slightly in the oven.
Leave it at the counter to cool to room temperature, and then refrigerate it.

Serving:

Serve cooled.
