120 g Butter, melted
500 g Cream cheese
700 mL Whipping cream
5 tbsp Honey
300 g Blueberry jam
100 g Blueberries, fresh
Mint leaves for decorating

Preparation:

Cover the bottom of a cake pan with baking paper.

Crust:

In a bowl mix the ground biscuits and the melted butter.

Distribute evenly the biscuit-butter mixture on the surface of the pan.
Press it firmly in the cake pan until you get a firm base.
Let cool in a fridge while you prepare the blueberry cheesecake.

Blueberry Cheesecake:

Whip 500 mL whipping cream until you get a firm cream.

Gradually add the cream cheese to the whipping cream with constant mixing.

Add the honey.
Mix until all ingredients combine.

Divide the whipping cream-cream cheese-honey mixture into 2 equal parts.

In one part add 200 g of the blueberry jam.
In the other part add the rest (100 g) of the blueberry jam.

Whip the rest of the whipping cream (200 mL) separately.

Take out the crust from the fridge.
