Ingredients

2 Large potatoes approximately 700 g total
500 g Beef
2 Medium sized carrots
1 Red paprika
Onion, chopped
Garlic clove
4 Tomatoes
Salt and Pepper
6-8 tbsp Olive oil
400 mL Beef stock

Preparation:

Cut the beef at equally sized squares, approximately 2 cm x 2 cm.

Heat a frying pan to medium heat.
Add 3 - 4 tbsp oil.
Add the beef and fry it until all the sides become golden.

In the meantime, wash the vegetables.
Peel the onion and the carrots and cut them in squares and circles, respectively.
Cut the paprika in half and then in squares.
Peel the tomatoes and potatoes as well and cut them in small pieces.

Cooking:

In a pot heat 3-4 tbsp olive oil.
Add the onion and fry it until it becomes transparent.
Add the carrots and paprika.
Mix nicely until paprika softens a little.

Add the beef.

Peel the garlic and press it through a garlic press.
Add the garlic to the onion and vegetable mix.

Once you start smelling the garlic add the tomatoes and beef stock to the mixture.
Mix nicely.
Add the potatoes as well.
Season with salt and pepper. Add other spices, if you wish.

If needed, add enough water to cover all ingredients.
Bring to boil and then lower to medium heat.
Cover the pot and cook for at least 45 min.
If needed add a little water during cooking.

Open the pot and cook for 15 min more.

Serving:

You can serve this dish with a spoon of sour cream.
