Apple Pie

Every occasion is suitable to eat a pie.

Pie Crust:

In a bowl mix the flour, salt, sugar and cold butter.
Gradually start adding water until you get a nice and firm dough.

Place the dough on the kitchen counter and knead it by hand.
Divide the dough in 2 equal parts and form nice balls.

Cover both balls with food foil and place them in the fridge for at least 30 min. If you are in a hurry you can put them in the freezer for 15 min.

Apple Filling:

Put the apples in a bowl, add the lemon juice, spices and mix them until the spices distribute evenly.

In a large pot melt the butter.

Dissolve the corn starch in a little water.

Add the apples and the corn starch to the butter.

Stew the apples for a short while (10-15 min) until they soften, but are not completely soft.
The juices should become more dense, like a cream.

Remove from heat and let them cool.

Preparation:

Preheat oven to 190 degrees Celsius.

Pie Crust:

Take one dough out of the fridge.
Roll it out on the kitchen counter. Using a rolling pin make a nice round crust, in size a little bigger than your pie baking pan.

Repeat with the second dough.

Transfer one of the pie crusts on the pie baking pan. If there are hanging edges you can trim them with a knife or scissors.

Place the pan in the fridge for a few minutes.

Take out the dough.
Brush the egg-milk mixture on the dough. This will prevent the pie to become soggy.

Put the apple filling over the pie crust.
Make it a little higher in the middle than on the edges.

Place the second dough on top of the apple filling.
There is no need to cool the cake at this stage.

Brush the second pie crust with the rest of the egg-milk mixture.

Baking:

Bake the pie in preheated oven for approximately 1 h.

Serving:

Serve the pie a little cooled.
My suggestion is with a scoop of vanilla ice cream and some sauce like (salted) caramel.

The cake can be decorated in different ways. One option is given in the image above.
