White Chocolate Mousse Cake with Nuts and Blueberry Jam

Ingredients

Adjust Servings:
260 g All purpose flour
2 tsp Baking powder
0.25 tsp Baking soda
1 tsp Salt
175 g Butter, melted
300 g Honey Sugar, agave syrup
3 Large eggs
150 g Walnuts, chopped
100 ml Milk Up to 100 ml
400 g Cream cheese Neutral
400 g White chocolate
600 ml Whipping cream
Freshly squeezed juice from 1 lemon
1 Bourbon vanilla
150 g Vanilla yogurt Optional
200 g Blueberry jam

A very decorative cake for a birthday party table.

Preparation:

Preheat the oven to 180 degrees Celsius. Grease three 22 cm round baking pans.

Batter:

In a bowl nicely mix the dry ingredients.

In another bowl nicely mix the liquid ingredients.

Combine the dry and the liquid ingredients in a single bowl.

Gently fold in the chopped walnuts.

Divide the batter equally in the three baking pans. Bake for approximately 30 min or until a toothpick comes out clean.

Let them cool completely.

White Chocolate Mousse:

In one bowl whip the whipping cream until firm.

In another bowl mix the cream cheese and melted white chocolate. If using, add the vanilla yogurt. Mix thoroughly using a hand mixer.

Gently fold in the whipping cream to the rest of the frosting.

Add the lemon juice and bourbon vanilla. Mix again.

Assembly:

Place one batter layer on a cake plate. Put 1/3 of the frosting on it and spread evenly on the batter surface. Do the same with the two other layers.

Leave some frosting so you can cover the rest of the cake and the sides.

Serving:

It is best if the cake is in the fridge overnight. This will allow for the ingredients to combine and the cake to become firm.

Decorating:

For a spring look, whip some more whipping cream (500 mL is enough).

Divide the whipped cream in 3 parts. Use two different shades of green. You can leave the last white or color it ivory.

For an artistic look, unevenly put the colored whipped cream on different places on the sides of the cake.

Cover the top of the cake with the white/ivory whipped cream.

Using a knife smooth the top and the sides of the cake. This way the colors will also blend.
