Ingredients

150 ml double cream
1 large can(s) ready-made custard, about 425-450ml
30 g glacé cherries, chopped
20 g candied angelica, chopped
20 g candied peaches or apricots, chopped
20 g candied peel, chopped
20 g candied melon or pineapple, chopped
20 g seedless raisins OR
20 g muscatels, chopped

Instructions

Whisk the cream until just thickened. Stir in the custard and mix thoroughly. Freeze in an ice cream maker according to instructions of turn in to a container and freeze for about an hour or until just solidifying.

Whisk for about 2-3 minutes and return to freezer for about another 30 minutes. Repeat these procedures twice more at 30 minute intervals.

Stir in the fruit and mix until well distributed. Return the mixture to the container and freeze for 2 hours or longer, until solid.

Remove from freezer about 30 minutes before serving and place in refrigerator to soften.

Serve in glass ice cream bowl or glass with one or two fan wafers per serving.
