Ingredients

500 g | apples |
1 tbsp | vodka or rum or lemon juice |
100 g | dark chocolate, coarsely grated |
4 | eggs |
1 pinch(es) | salt |
200 g | butter |
200 g | sugar |
1 packet(s) | vanilla sugar |
1 tsp | cinnamon |
2 tsp | cocoa powder |
300 g | plain flour |
½ packet(s) | baking powder |
To garnish: | |
icing sugar | |
2 tbsp | vodka or water or |

Instructions
Wash, peel quarter and core the apples. Cut the quarters crossways in thin slices and mix them with rum, vodka or lemon juice as desired. Coarsely grate the chocolate.Preheat the oven to 175°C, grease the springform tin (24cm) and coat with breadcrumbs.
Separate the eggs. Beat the egg whites with the salt until stiff. Whisk the butter together with the sugar and vanilla sugar until creamy, then stir in the egg yolks, the cocoa powder and the cinnamon. Fold in the beaten egg white. Sieve the flour and the baking powder on top and fold in. Finally fold in the apple slices and the chocolate.
Spoon the dough into the springform and bake for 45 minutes. Allow to cool slightly, then remove the cake from the tin.
Stir together the icing sugar with vodka or lukewarm water and brush the glaze on the still warm cake. Alternatively brush the cake with melted couverture.
