Ingredients

8 slice(s) | cooked ham |
1 | pork tenderloin |
250 g | mushrooms, fresh, sliced |
100 ml | broth |
50 ml | heavy cream |
8 slice(s) | cheese |
some | chives, fresh |
some | vegetable oil |
some | salt and pepper, to taste |
Instructions
Cut the pork tenderloin into 1.5 cm thick slices and season them with salt and pepper. Heat some oil in a frying pan and cook the meat for 2-3 minutes per side until nice and brown.Remove the slices from the pan and add the mushrooms. Cook them until all the liquid has evaporated. Add broth and cream, and season with salt and pepper. You might need to thicken the sauce a little bit, but not much. (To do so, use 1 tsp cornstarch dissolved in 2 tbsp water) Add the chives to the sauce and fold in.
Toast bread lightly in the toaster oven so it does not get soggy.
Assemble toast on a baking sheet as follows:
Top bread with one slice of ham, a couple of pieces of meat and a spoonful of mushrooms. Then, add a slice of cheese and bake at 200° C until the cheese has melted and gotten bubbly. For extra special occasions, try using Sauce Hollandaise instead of cheese.
