Beef and Rice Stuffed Zucchini

Ingredients

Adjust Servings:
6-8 Zucchinis
1 Onion, chopped
1 Garlic clove
400 g Beef, minced
up to 100 g Rice
400 g Crushed tomatoes
200 mL Beef broth
Cheese mozzarella, parmesan, cheddar
2-3 tbsp Olive oil
Chopped chives/parsley
Salt and Pepper

Preparation:

Preheat oven to 200 degrees C.

Wash the zucchinis and slice 2 cm from the top.
Take out the core from the inside. Be careful not to make a hole at the bottom.

Cook the rice as instructed.

In a sauce pan put some oil and heat it.
Add the meat and cook until it becomes golden brown.

Once the meat is brown, add the core of the zucchinis, rice, cheese, garlic and spices.
Mix everything and let cook for a few minutes.

Tomato sauce:

Meanwhile, put the tomatoes in tomato sauce in the baking pan.
Add chopped onion and cover with beef broth.
Distribute the onions evenly on the bottom.

Add the zucchinis one by one in the baking pan over the tomato sauce.

Fill them with the beef-rice mixture.
If you are a cheese lover – add some cheese once the zucchinis are full.

Put the zucchini tops on the zucchinis.

Baking:

Cover with foil and bake for 30 min in a preheated oven.

Remove the foil and bake for at least 30 min more minutes or until the zucchinis are soft and the meat is cooked.

Serve the zucchini with a spoon of the tomato sauce.
