6-8 Zucchinis

1 Onion, chopped

400 g Beef, minced

up to 100 g Rice

400 g Crushed tomatoes

200 mL Beef broth

Cheesemozzarella, parmesan, cheddar

2-3 tbsp Olive oil

Chopped chives/parsley

Preparation:Preheat oven to 200 degrees C. |

Wash the zucchinis and slice 2 cm from the top. |

Cook the rice as instructed. |

In a sauce pan put some oil and heat it. |

Once the meat is brown, add the core of the zucchinis, rice, cheese, garlic and spices. |

Tomato sauce:Meanwhile, put the tomatoes in tomato sauce in the baking pan. |

Fill them with the beef-rice mixture. |

Put the zucchini tops on the zucchinis. |

Baking:Cover with foil and bake for 30 min in a preheated oven. |

Remove the foil and bake for at least 30 min more minutes or until the zucchinis are soft and the meat is cooked. |

Serving:Serve the zucchini with a spoon of the tomato sauce. |
