Mozzarella cheese
Olive oil

Preparation:

Put baking paper on a baking pan.
Heat the oven to 180 degrees C.

Wash the potatoes. Do not peel them.

Cut slits into the potatoes 3/4 to the way down. Cut less than 1 cm apart. Be careful not to cut through.
To make it easier set a knife on each side of the potato.

Rub the potatoes with olive oil.
Using a brush put some olive oil into the cuts.
Sprinkle with salt and pepper.

Baking:

Transfer the potatoes to the baking pan.
Bake for at least 45 min or until the potatoes become soft. Check with a toothpick.
Add some olive oil to the potatoes every 15 min.

Once the potatoes become soft cut the mozzarella cheese into slices.
Put the mozzarella slices on top of the potatoes.

Put the potatoes back in the oven and bake for a little more, until the mozzarella starts getting golden.

Serving:

These oven-baked potatoes can be eaten as a stand alone dish, or can be garnish for a meat-based dish.

Tip:

If you are worried it can be a little dry, make a yogurt dip:
- 100 g cream cheese
- 2 tbsp Greek yogurt
- 2 tsp pesto genovese
