Ingredients

Adjust Servings:
500 g Phyllo dough
300 g Butter, softened
150 g Powder sugar
4 Large eggs
100 g All purpose flour
1 Baking powder
2 Vanilla
2 Lemons
50 mL Rum
150 g Caster sugar
250 g Walnuts, chopped + more to sprinkle on the phyllo dough
Sunflower oil to grease the baking pan
700 g Sugar
750 mL Water

Copenhagen Baklava

Not a traditional recipe for baklava, but equally good.

Brown layer:

From 2 eggs, separate the egg yolks from the egg whites.
Add a pinch of salt to the egg whites and beat them into a firm foam.

In another bowl, beat together the powder sugar and 150 g butter.
Add the egg yolks and beat until you get a foamy mix.
Add the flour, baking powder, vanilla, lemon zest from 1 lemon and rum.

Using a spatula add the egg white foam to the foamy mixture.
Mix gently until all ingredients combine.

Yellow layer:

In a mixing bowl, beat together 2 eggs and caster sugar.
Add the chopped walnuts and mix everything.

Assembly:

Grease the bottom of a baking pan with sunflower oil.
Put 1/3 of the phyllo dough. Sprinkle a little sunflower oil and some chopped walnuts.
Add the yellow layer.
Put 1/3 of the phyllo dough. Sprinkle a little more sunflower oil and some chopped walnuts.
Add the brown layer.
On top of the brown layer place the last third of the phyllo dough.

Baking:

Preheat the oven to 250 degrees C.

Cut the baklava in pieces.
In a frying pan bring the rest of the butter to boil.
Pour the butter over the baklava.

Bake the baklava at 250 degrees C for 10 min.
Lower the temperature to 150 degrees C and bake for approximately 30 min.
Leave the baklava in the hot oven for 10 min.

Sugar sauce:

While the baklava is baking, prepare the sugar sauce.
In a pot put together the sugar, water, 1 vanilla, as well as zest and juice from 1 lemon.
Bring to boil for 10 min.

Let the sugar sauce cool a little.
Pour it over the baklava.

Serving:

Serve warm.
