Ingredients

10 Large eggs
400 g Sugar
250 g Walnuts, chopped
1 tbsp Cocoa powder
500 mL Milk
3 tbsp Corn starch
1 Vanilla
300 g Butter, softened
100 g Chocolate 45% cocoa

Preparation:

Preheat the oven to 160 degrees C.

Divide the egg yolks from the egg whites.
Place the egg yolks in two separate cups, 5 yolks/cup.

Cake sponge:

Put the egg whites in the mixing bowl of the mixer. Add a pinch of salt.
Whip the egg whites until you get a nice a firm foam.

Gradually add 200 g sugar.
Whip until the sugar is incorporated in the foam.

Mix together the chopped walnuts and cocoa.
Using a spatula add the walnut-cocoa mixture to the whipped egg whites.
Mix gently but nicely until the ingredients combine.

Place a baking sheet on a baking pan.
Gently pour the cake sponge. Even it with a spoon.
Bake it in a preheated oven for 30 min.

Remove from the oven and let it cool completely.

Chocolate filling:

Using a mixer mix nicely 5 egg yolks and 100 g sugar. The mixture will be prepared when you will no longer hear cracking when mixing 0 the sugar has melted.

In a pot put the milk.
Gently add the yolk-sugar mixture, the cornstarch and vanilla.

Cook on medium heat with constant mixing.
This will prevent the formation of crumps.
After a while the mixture will become more dense, like a pudding.

Remove from heat and let it cool completely.
When it will be cooled (but really completely, not even warm) add 150 g butter. Mix using a hand mixer until you get a nice, smooth and even mass.

Yellow fillling:

Fill a big pot with water. Bring to boil and reduce the heat so the water will still evaporate.

Put the rest of the egg yolks (5) and 100 g sugar in a pot.
Place this pot on top of the bigger one filled with water.
Cook the egg yolks and the sugar until the sugar is completely melted.

Add the chocolate chopped and mix until the mass is even and the ingredients are nicely distributed.

Remove from heat and let it cool completely.
Like with the previous filling, when the mixture will be cold add 150 g butter and mix nicely using a hand mixer.

Assembly:

Start assembling the cake.
For a rectangle cake - cut the cake sponge lengthwise on 3 pieces.

Put a layer of the cake sponge, than the chocolate filling and then the yellow filling.
Repeat the procedure.
End the layering with the cake sponge.

As a last layer I used chocolate ganache.
On top of it i sprinkled some Oreo crumbs.

Tips:

It is better for the cake to be made one days in advance and left in the fridge overnight.
This way all ingredients have time to combine, and the structure is firmer.
This makes it easier for cutting.
