Ingredients

500 g Asparagus
Half Avocado ripe
1/2 lemon Freshly squeezed lemon juice
to taste Salt and Pepper
2 tbsp Olive oil
Cayenne pepper
Fresh parsley leaves chopped

Preparation:

Remove the bottom harder part of the asparagus and wash them nicely.

Cut the asparagus in pieces 4-5 cm long. Cook them in boiling salty water for 6 min. Cook the top of the asparagus only 3 min.

Remove the asparagus from the water, drain the pieces a little. Put the tops of the asparagus aside. Put the rest of the asparagus pieces in a blender.

Add half of an avocado, the lemon juice, spices, olive oil and parsley, if using.
Blend all ingredients until you get a nice smooth paste.

Cut a few of the asparagus tops in 0.5 cm thick pieces. Using a spoon, mix them in the paste.

Serving:

Let the paste cool in a fridge for 15 min before serving.

Tip:

If you are using the asparagus paste as a gnocchi or pasta sauce, leave some asparagus tops for decoration.
If you want even more creamy taste, you can also add a tbsp of sour cream.
