1/2 lemon Freshly squeezed lemon juice

Preparation:Remove the bottom harder part of the asparagus and wash them nicely. |

Cut the asparagus in pieces 4-5 cm long. Cook them in boiling salty water for 6 min. Cook the top of the asparagus only 3 min. |

Remove the asparagus from the water, drain the pieces a little. Put the tops of the asparagus aside. Put the rest of the asparagus pieces in a blender. |

Add half of an avocado, the lemon juice, spices, olive oil and parsley, if using. |

Cut a few of the asparagus tops in 0.5 cm thick pieces. Using a spoon, mix them in the paste. |

Serving:Let the paste cool in a fridge for 15 min before serving. |

Tip:If you are using the asparagus paste as a gnocchi or pasta sauce, leave some asparagus tops for decoration. |
