singin hinnies are a traditional Geordie recipe originating from North East England. These delicious griddle cakes are made with simple ingredients like flour, butter, and milk. Ingredients

225 g plain flour
60 g butter
60 g lard or hard vegetable fat
30 g currants
50 g sugar
½ tsp salt
1 tsp baking powder
milk and sour cream 50/50, to mix

Instructions

Place flour in a bowl with salt and baking powder and mix well together. Rub in the fats until the mixture resembles bread crumbs. Add the currants and sugar and mix to distribute. Add milk and sour cream one tablespoon at a time until you have a soft dough.

Knead briefly on a lightly floured surface and roll out to fit your pan.

Cook on an ungreased, pre-heated griddle pan for 2-3 minutes per side or until browned. Turn over and cook the second side. A wide fish slice or similar will be needed to turn the scone as they can otherwise break.

Cut open, spread with butter, divide into four portions and serve immediately.

This was a staple amongst poor families, who would sometimes cook them directly on the top of their iron stoves.

About this recipe:
The scone is said to ‘sing’ because of the squeaks sometimes emitted by the cream and fats during cooking. ‘Hinny’ is a local dialect term of endearment and may have been a corruption of ‘honey’.
