Ingredients

6 medium carrots, peeled, sliced
1  leek, trimmed
1 medium potato, peeled, diced
2 medium onions, chopped
3 clove(s) garlic, minced
2 tbsp ginger root, minced
400 ml coconut milk
1 l vegetable broth
120 ml dry white wine
2 tbsp olive oil
1 tsp paprika
1 tsp turmeric
salt and pepper, to taste

Instructions

Heat oil in a medium pot, sauté onions for about 2 minutes. Add leeks and garlic and sauté for about 4-5 minutes until softened, but not browned.

Add carrots and stir until carrots begin to caramelize a bit, about 6 more minutes.

Add potato, ginger, stock, and coconut milk. Stir and bring to a boil for about 5 minutes; reduce heat and add spices.

Cook until potatoes are tender, about 20-25 minutes.

For a smoother outcome, purée soup in batches in a blender or use a hand-held blender. Serve.
