Holiday Sweet & Simple: Christmas Cookie Sammies

It’s no secret that Christmas cookies are a seasonal staple. I know, I know. It’s shocking. But some people just don’t like baking. Or perhaps they like it, but they aren’t particularly skilled at it. Now, if you’re one of those people, here is my appeal to you: bake some cookies this year. I’m not asking you to scratch-make sugar cookie dough, roll it out, cut it into Christmas shapes, then whip up some royal frosting and elaborately decorate each one. Let’s be honest; I’m not even going to do that. What I am asking you to do is take the semi-homemade route. It’s still tastier than store-bought, and you get to spend quality time in the kitchen with your loved ones. Don’t have anyone to bake with? Bake with yourself! Baking can be very relaxing; it’s a great stress-reliever.

Christmas Cookie Sammies

Yield: 12 cookie sandwiches (24 cookies total)

All You Need is:

  • 2 packages Pillsbury Holiday Shape Cookies
  • Frosting of you choice: 2 cans of Pillsbury Easy Frost(vanilla and/or chocolate), 2 jars of store-bought frosting, or one batch of your favorite homemade frosting
  • Christmas sprinkles

To Serve It Up:

  1. Bake cookies according to package directions. I recommend baking them 1-2 minutes less because the suggest time on the box made them a bit too dark for me. Let cool completely.
  2. Frost the bottom of one cookie and top with another, making a sandwich. Don’t press down too hard or the frosting will ooze out!
  3. Gently roll the cookie sandwich like a wheel in a bowl of sprinkles so that they catch onto the frosting and coat the edges.
  4. Repeat with remaining cookies. When finished, I recommend storing in the fridge or someplace not too warm. Enjoy!

  7. I would bake but it never works out. Yeast hates me! Still, I like to eat homemade cookies. Sometimes others make them for me!
